Earlier last week, I posted an epic video of Bert Parker making these amazing 4-ingredient biscuits. See the video below:

I used her amazing recipe and tweaked it just a bit. I added a few tablespoons of sugar to the mix just to sweeten the biscuit. And, it topped it with turbinado sugar before I put them in the oven. Then, I sweetened some cream (1 cup of cold cream, 2 tablespoons of sugar, 1/2 teaspoon of vanilla) and whipped it using a hand mixer. The filling…it’s so good. Catch the recipe below. And then, I just assembled them…biscuit first, then filling, then cream. It’s soooo good.

White Hennessy Peach Cobbler Filling

4 cups of fresh peaches, sliced

1 cup of white sugar

1 cup of brown sugar

the juice and zest of 1 lemon

1 teaspoon of cinnamon

1/2 teaspoon of nutmeg

1 pinch of salt

1 good tablespoon of vanilla

1 teaspoon of cornstarch

1 teaspoon of water

2 tablespoons of White Hennessy

2 tablespoons of butter

1..In a large pot, add all of the ingredients (except the cornstarch and water) and cook on medium heat until the filling comes to a boil.

2. In a small bowl, mix together the cornstarch and water until dissolved. Then pour into the filling while it’s boiling. It should thicken immediately while stirring. Turn off the heat.

3. To assemble, add the biscuits to a plate. Then, pour over the filling being sure to get some peaches too. Top with whipped cream and mint and enjoy.
