You know those days you have when you’re super swamped and need to get dinner on the table? You know, like the Mondayest Thursday EVER? In those times, it’s hard to actually think about coming home and then having to cook dinner. Usually, take out sounds great. But, I promise, keep this recipe in your back pocked. Usually, you’ll have most of the ingredients. And, if you can stand to wait about 15 minutes, you’ll have a delicious dinner on the table in no time. Try it. You’ll love it.

2 cups of diced rotisserie chicken
1 cup of onion, diced
10 cloves of garlic, sliced
4 cups of leftover rice
1 cup of frozen peas
1 cup of frozen carrots
1/3 cup of soy sauce
2 tablespoons of brown sugar
1 tablespoon of sesame oil
2 tablespoons of vegetable oil
1 tablespoon of ginger paste
1 tablespoon of lemongrass paste
Sliced scallions, to garnish

Heat a skillet on the stove. When, it’s hot, add in the vegetable and sesame oils. Add in the onion and garlic and cook for about 30 seconds. Then, toss in the chicken to heat through. Next, toss in the rice and cook together for 2 to 3 minutes. To finish, add in the remaining ingredients and cook together for another 4 minutes. To serve, garnish with sliced scallions and enjoy while it’s still warm.
That picture sure doesn’t look like there’s 10 cups of ingredients in it. How many people are you feeding?
