You know how you’re really in the mood for something sort of creamy and decadent and really can’t decide? Listen, this is it! It’s really the combination of the crab and shrimp and spices that really do it for me. The way the cheeses slide right through this dish is impeccable. Plus, let your imaginations run wild with the ideas and combinations. I just provide a guide. You take it and make it your own!
4 Russet potatoes
1/2 stick of butter
1/2 cup of half and half
1/2 teaspoon Onion powder
1/2 teaspoon Garlic powder
1/2 teaspoon Smoked paprika
1/2 teaspoon Old Bay
1 good pinch of Kosher salt
1/2 teaspoon Black Pepper
1/4 cup of Grated parmesan
1/2 cup of Mild cheddar
1/2 pound of fresh shrimp
1/2 pound of fresh crab
1 teaspoon Fresh parsley
1/2 teaspoon Fresh thyme
*Cheddar cheese to top
Preheat the oven to 400 degrees. After scrubbing the potatoes, pat them dry and poke holes in them with a fork. Then, bake the potatoes for 35 minutes or until they’re fork tender. Set aside and let them cool.
Cut the potatoes in half and scoop out the insides into a bowl. Then, add in the butter, half and half, onion powder, garlic powder, smoked paprika, Old Bay, Kosher salt and black pepper. Stir to combine, then add in the remaining ingredients: the Parmesan and Cheddar cheeses, shrimp, crab, parsley, and thyme. Mix well and scoop into the potato skins.
Top with more cheddar cheese and bake for 20 minutes or until golden brown. Serve immediately.
