Alas, yet ANOTHER trip to the farmer’s market had me in the frozen food section. Well, it’s not that large and the things that are there are things that are really good for you. Berries have all types of health benefits. So, this cobbler is kinda healthy, right? Regardless, it’s good. And super easy. Whatever you do, don’t put the filling right into the oven from the mixing bowl. Cook it on the stove first. You’ll need that so it gets nice and thick.

 

 

Triple Berry Biscuit Cobbler

About 3 1/2 cups of frozen berries, defrosted

1 1/2 cups of sugar

A good splash (about 2 tablespoons) of whiskey or cognac

1 teaspoon of vanilla

1/4 cup of cornstarch

1/2 teaspoon of salt

2 tablespoons of lemon juice (or lime juice)

1 package of refrigerator biscuits

 

1. In a large bowl, combine the berries, sugar, cognac, vanilla, salt, cornstarch, and lemon juice until well combined.

2. Then, transfer to a sauce pot and cook over medium heat until thickened. Stir often so nothing sticks.

3. Then, spoon the filling into a baking dish and top with biscuits.

**Note, I add an egg wash and sprinkle turbinado sugar on top.

4. Bake in a 350 degree oven for 8-10 minutes or until the biscuits are golden brown. Enjoy with cream or ice cream.
