Are you a cilantro lover? If you’re not, I kinda feel sorry for you – lol. Well, not really. But, I have to tell you something. Cilantro is probably one of my absolute favorite herbs in the world. It’s bright. It’s fresh. It has a super clean taste and I try to sneak it in wherever I can.
How about a salad dressing? Yes, I know – a cilantro vinaigrette.

Now, let’s get into the actual recipe. It’s so easy. Plus, the blender does all the work.
1 bunch of cilantro, washed & dried
3 cloves of garlic
1/2 teaspoon of Kosher salt
1/2 teaspoon of black pepper
3/4 tablespoon of Dijon mustard
1 tablespoon of lime juice
1 tablespoon of sugar
1 tablespoon of red wine vinegar
1/2 cup of olive oil

Add everything to a blender, except for the olive oil. Blend until smooth. Then, with the blender on low, stream in the olive oil. Once all the oil is added, increase the speed on the blender and let is blend for 60 seconds. Store in an air-tight container in the fridge until you’re ready to use.
