I swear, no really, I swear this will be done and on your table before the delivery guy shows up. Plus, it’s sooooooooo good! I love a quick cooking weeknight meal. Plus, you’ll totally have most of these ingredients on hand already. Listen, if you can, get a fresh pineapple for this. I had some left over from my juicing this morning and it totally makes a huge difference in the entire dish.

Sweet & Sour Cauliflower

For the sauce
1 1/2 teaspoons of cornstarch
1 1/2 teaspoons of water
1/2 cup of pineapple juice
3 tablespoons of brown sugar
3 tablespoons of rice wine vinegar
1/2 cup of vegetable stock
1/2 teaspoon of garlic powder
1/2 teaspoon of red pepper flakes

2 cups of fried cauliflower (process listed below)
1 cup of diced pineapple
1 cup of diced red bell pepper
1/2 cup of sliced red onions
2 tablespoons of reserved oil from frying the cauliflower
Chow mein noodles, cooked & drained
scallions & sesame seeds, to garnish

Start by frying the cauliflower. Just season it well with a prepared Cajun seasoning or seasoned salt after you wash it. This way the seasoning sticks. Then, dredge in all purpose flour and fry until golden brown. Set aside.

Then, saute the onions and bell pepper in the oil until just about tender. Then, throw in the pineapple and cook for about 60 seconds. Meanwhile, in a bowl, combine all of the ingredients for the sauce. Then, pour in the sauce while the heat is on high. As soon as the sauce comes to a boil, it will start to thicken. Turn off the heat and combine with the cooked cauliflower and noodles. Garnish with sesame seeds scallions.
