The beauty of a salad is that you can add Hennessy to the dressing! No, seriously. One of my favorite drinks is a French 75. Using the same flavors in a vinaigrette is really sorta life changing!

Salmon Salad With French 75 Vinaigrette
3 salmon fillets
1 1/2 tablespoons of olive oil
1 teaspoon of garlic lovers
1 teaspoon of Adobo
For the vinaigrette
2 lemons, juiced
3 cloves of garlic
1 tablespoon of Dijon mustard
2 tablespoons of sugar
1 teaspoon of Kosher salt
1/2 teaspoon of black pepper
1/2 cup of champagne
2 teaspoons of cognac
2 cups of olive oil
For the salmon, preheat the oven to 350 degrees. Season the fish with the garlic seasoning and Adobo and drizzle with olive oil. Roast on a baking sheet for about 12 minutes.
Meanwhile, make the dressing. Combine all ingredients in a blender except the olive oil. Blend on high until combined and then while the blender is running, slowly stream in the olive oil until all combined.
You can make a salad of your choice, and then dress is with the dressing and top it with the roasted fish.
