So, I had this idea. I took fresh salmon (particularly, because I ordered too much and had too much on hand). And, I needed something to do with it. Sooooo, I was like, let’s make salmon burgers. I love salmon. I love a burger. Let’s go!

Not only was I trying to make the most perfect salmon burger, I needed it to be juicy and full of all the right flavors. The pickled red onions gave it the kick I needed, too. Listen, whatever you do – please toast the bun in butter. It makes all the difference in the world.

Here goes:

2 pounds of salmon, cut into chunks

1 tablespoon of Kosher salt

1 teaspoon of black pepper

1/2 teaspoon of garlic powder

2 tablespoons of fresh dill (or more, if you like it)

1/4 cup of olive oil

Add all of the ingredients to a food processor. Then, pulse until the mixture is fine (like a meatloaf) with a few chunky pieces. Then, form into 1/3 pound patties and cook on a hot grill until medium well.

I added mayo & mustard to a buttered & toasted bun along w/a few pickled onions.

The onions were easy. Just add 1 cup of apple cider vinegar, 1 cup of sugar, and 1 cup of water to a sauce pot and bring it to a boil. Then, add in the onions and let the whole mixture cool. Then, chill in the fridge for at least 2 hours before enjoying. Simple.

Oh, and if you do like me and keep them in a mason jar, you’ll have pickled onions to add to tons of things!
