This past Summer has been one for the books for me. I mean, I’ve literally travelled everywhere. Right now, I’m typing this from a hotel room in Japan! See what I mean?
One of my destinations this past year – twice – was Punta Cana. I love that place. Well, the resort life is really amazing. The food. The smells. The sounds. They’re all simply amazing. If you’ve never had a chance to wake up on a resort to the sounds of the ocean, I mean, you haven’t really lived – lol.
One of my all time favorite combinations is rum and lime anything. I had so many rum sours and rum and lime with Coke that it’s ridiculous. But, that’s what you do on vacation, right? Anyway, it’s frigid pretty much all over the United States right now. And well, we could all use an escape. So, I fancied up my mixed green salad with this luscious reminder of the tropics. It’s my rum lime vinaigrette. It’s sooooooooo good. This salad and a Pina Colada and you can practically hear the steel drums and the waves of the ocean crashing against the shore! Enjoy.
Rum Lime Vinaigrette
2 tablespoons of good rum
2 tablespoons of fresh squeezed lime juice
1/2 teaspoon of salt
1/2 teaspoon of pepper
2 garlic cloves
1 teaspoon of Dijon mustard
2 tablespoons of sugar
3/4 cup of olive oil
For the best results, you’ll need to use a blender. Start by adding the rum, lime juice, salt, pepper, garlic, mustard, and sugar to a blender. Blend it on high speed for about 60 seconds. This will ensure the garlic cloves are all broken up.
Next, turn the blender on low speed. Remove the lid and stream in the olive oil a bit at a time. This will get you a lovely thick salad dressing. Once all the oil has been incorporated, you can enjoy the salad dressing right away.
Chill what you don’t eat and you’ll have it ready for your next salad!
