One of the quintessential dishes we had growing up was a pot of green beens and white potatoes. I mean, honestly, there’s nothing like it. The smoked meat cooked all day and fell apart. The green beans were luscious and the potatoes soaked up so much flavor. I’ve decided to give a slight nod to those Sunday afternoon side dishes with a super easy salad that’s almost keto, but it’s so good, you probably wouldn’t even care!

1 1/2 pounds of green beans, cleaned and trimmed
1/2 pound of potatoes, cut
1 pound of smoked turkey tails, boiled and cooled
1 teaspoon of Kosher salt
1/2 teaspoon of black pepper
1 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 teaspoon of sugar
1/4 cup of oil
chopped red onion, for garnish
Start by preheating the oven to 400 degrees.
On a sheet tray, toss together the green beans and potatoes along with a drizzle of olive oil, salt, pepper, garlic powder, onion powder, and sugar. Roast in the oven until the potatoes have cooked through and the green beans are tender. This should take about 15 minutes.
Meanwhile, saute the smoked turkey tail meat in a bit of olive oil until it crisps up like bacon. Once the green beans are out of the oven, garnish with the smoked turkey tails and a bit of chopped red onion and enjoy while warm.
