I try to put red velvet into as many recipes as I possibly can. How can you not love the combination? It’s sweet. It’s decadent. And, it’s the epicenter of most southern dessert tables. Enjoy this new spin on an old favorite.

Red Velvet Twinkies

1 cup of vegetable oil

1 1/2 cups of buttermilk

2 cups of sugar

2 eggs

1 tablespoon of vanilla

2 tablespoons of red food coloring

1/2 cup of unsweetened cocoa powder

1 pinch of salt

1 teaspoon of baking soda

2 cups of all purpose flour

1. Combine the sugar, vegetable oil, and buttermilk until the sugar has dissolved.

2. Then, add in the eggs, vanilla, and food coloring and stir to combine well.

3. Lastly, add in all of the dry ingredients and mix well to incorporate.

4. Pour into molds that have been greased and floured and bake at 350 degrees for 12 minutes or until a tooth pick comes out clean.

To make the frosting, just combine 8 ounces of cream cheese with 1 1/2 cups of sugar until the sugar has dissolved. Then, add in 1 teaspoon of vanilla along with 3/4 cup of cold heavy cream and whip on high until light and fluffy!FullSizeRender (1)
