Ramen noodles is a dish that we ate so much growing up. It wasn’t that it tasted amazing. It was more because it was cheap. It was super cheap. We didn’t have a lot of money and so, well, we ate those noodles a lot. It’s nice to jazz up and old favorite every once in a while. I hope you enjoy!
Quick Seafood Ramen
4 cups of chicken stock
1/4 cup of soy sauce
1/4 cup of ponzu
1/4 cup of mirin
2 tablespoons of brown sugar
5 garlic cloves, sliced
1 teaspoon of minced ginger
1/2 tablespoon of red pepper flakes
2 tablespoons of vegetable oil
1 teaspoon of black pepper
Sliced scallions, to garnish
1/2 pound of jumbo shrimp
1 cup of lobster meat
2 packs of packaged ramen noodles
2 cups of your favorite sliced veggies (I used red bell peppers, yellow bell peppers, and red onions).
1. Bring the chicken stock to a boil, then add the soy sauce, ponzu, mirin, brown sugar, garlic, and ginger.
2. After the soup has cooked for 5 minutes, add the remaining ingredients (except scallions and packaged ramen) and simmer until the seafood has cooked through.
3. To serve, add the ramen to the hot soup 2 minutes before you’re ready to serve. Once the ramen is tender, garnish with scallions and serve.
*I added leftover bacon and frozen green peas to my ramen.
