I’m such a fan of quick cooking pasta dishes. By the time the pasta has cooked up, the dish is ready. I cooked this live on Periscope and FB one day. I’m too lazy to find the actual video, but if you search the recipe on social media, I’m sure it’s there.


You can watch me make this live. Here’s the recipe for the sauce:

1 cup of onion, chopped

1 cup of mixed bell peppers, chopped

1/2 teaspoon of Kosher salt

1 pound of ground chicken

1 teaspoon of garlic paste

2 tablespoons of tomato paste

1 teaspoon of chili paste

1 tablespoon of dried Italian herbs

1/2 cup of good red wine

1 1/2 teaspoons of sugar

2 cups of crushed tomatoes

fresh basil, for garnish

2 tablespoons of olive oil

1.. In a skillet, saute the onion and bell pepper in olive oil until fragrant. Then, add in the grond chicken and cook until the chicken is just about cooked through.

2. Then, add in the garlic paste, tomato paste, and chili paste and stir well to combine. Cook for a few seconds, then add in the dried Italian herbs, sugar, red wine, and crushed tomatoes. Cook on medium heat for about 8-10 minutes, then reduce to a simmer until you’re ready to use.

I toss some cooked angel hair pasta and cubes of mozzarella cheese with some of this Bolognese sauce in a separate skillet. Then, I’ll garnish with fresh basil and Parmesan cheese for a complete meal.
