So, how many times have you made a pot roast and then there’s so much left over that you don’t know what to do? Well, here we are with this super easy recipe. Pot Roast Tacos!!!

 

3 cups of diced cooked pot roast

1 tablespoon of taco seasoning (recipe found here)

2 tablespoons of olive oil

1/4 cup of water

Taco Trimmings – whatever you like on your tacos. Pictured below are corn tortillas, sour cream, cilantro, red onion, radish, and a little Mexican crumbling cheese.

1. In a skillet, warm the oil through. Toss in the pot roast and season with the taco seasoning.

2. One the pot roast has warmed through, add in the water and stir. Turn off the heat and enjoy.

  1. I would love to try this but I don’t know how to make pot roast. Do you have a recipe for it? I couldn’t find one from the search.
