Listen – Taco Tuesday is a real situation. Here’s another way to jazz up the night while keeping in on brand. Feel free to switch out the cheeses or use chicken or turkey if you’d like!

Beef & Cheese Taquitos

2 poblano peppers, diced

5 cloves of garlic, chopped

1 tablespoon of olive oil

1/2 onion, diced

1 teaspoon of Kosher salt

1/2 teaspoon of black pepper

1 pound of ground beef

3/4 teaspoon of garlic powder

3/4 teaspoon of onion powder

3/4 teaspoon of chili powder

3/4 teaspoon of ground cumin

1 packet of Sazon

2 cups of shredded cheese

Corn tortillas (tooth picks)

Oil, for frying

To garnish: avocado, queso fresco, cilantro

In a large skillet, heat the olive oil and then add in the poblano peppers, garlic, and onion. Cook for about 3 minutes and then season with salt and pepper. Add in the ground beef, being sure to break it up as it cooks. Next, season with garlic powder, onion powder, chili powder, cumin, and Sazon. Cook together for 4 minutes and then turn off the heat and stir in the cheese. 

Spoon some of the beef mixture into corn tortillas and roll them up securing them with a toothpick. Next, heat some oil (or use the air fryer) and fry the taquitos on all sides until golden and crispy. Drain on paper towels and then top with the garnish of your choice.

Enjoy immediately.
