I mean, because you don’t already have enough ways to enjoy peach cobbler, right? To me, this is the quintessential party and entertaining dessert. It’s sophisticated enough to put on on the buffet and homey enough to remind you of Big Mama’s house. Isn’t that was desserts should do, anyway?

Here’s the recipe:
For the Butter Cookie Crumble
1 stick of room temperature butter
1 pinch of Kosher salt
1 cup of of sugar
1 cup of all purpose flour

Preheat the oven to 350 degrees. In a bowl, mix all the ingredients until they clump together. Sprinkle the clumps onto a sheet tray. Then bake until golden brown – about 10-12 minutes. Then, when the sheet tray comes out, use a fork and break up the cooked dough into even more clumps and let cook. They’ll harden as they cool. Then, set aside until you’e ready to garnish.

For the Vanilla Buttermilk Cake
1 cup of vegetable oil
1 1/2 cups of buttermilk
2 cups of sugar
2 eggs
1 tablespoon of vanilla
1 teaspoon of salt
1 teaspoon of baking soda
2 1/2 cups of all purpose flour

In a bowl, mix together the vegetable oil, sugar, and buttermilk until the sugar is dissolved. Then, add the eggs and vanilla and mix well. Finally, add the remainder ingredients and mix until smooth. Pour into a prepared cake back and bake for 12-15 minutes or until the cake is cooked through. Set aside and allow to cool.

For the Peach Cobbler Filling
1 stick of butter
4 cups of frozen peaches
1 tablespoon of cinnamon
1 1/2 cups of sugar
1 cup of brown sugar
1 1/2 tablespoons of vanilla extract
1/2 teaspoon of salt
the juice of 1 lemon
1/2 teaspoon of nutmeg
1 teaspoon of cornstarch, mixed with 1 teaspoon of water

In a skillet, melt the butter. Then add the peaches, cinnamon, sugars, vanilla, salt, lemon juice, and nutmeg. Cook until it comes to a boil. Then, add in the cornstarch slurry until and stir until it thickens.

For the White Hennessy Whipped Cream
2 cups of cold heavy cream
1/4 cup of brown sugar
1/4 cup of white sugar
1 good pinch of cinnamon
1 teaspoon of vanilla
1 good teaspoon of White Hennessey

Whip until creamy and frothy!

  1. I made this BUT could not find White Hennessey N T WHERE, so I used White Remy instead…I CRIED BECAUSE IT WAS SOOOO GOOD….FYI I also made the Kale and Cornbread Stuffed Salmon, Garlic Braised Collard AND Sweet Potatoe Curry #BOMBDOTCOM

  2. White Hennessy can be found when you go on vacation to the abroad at the duty free or on line. So that’s why you couldn’t find it. Thanks for finding an alternative.
