Well, I’m home all week. That means nothing but new recipes! Here’s one I whipped up after taking a visit to the farmers market! It’s a few recipes in one – but no worries, I’ll post the Periscope link below too. I cooked it LIVE!
Lemon Butter Salmon
2 6-ounce salmon fillets
pinch of salt
pinch of pepper
pinch of garlic powder
2 teaspoons of olive oil
1 teaspoon of butter
1. Preheat the oven to 400 degrees.
2. Meanwhile, get an oven safe pan hot by warming it on the stove. Then, season the fish on both sides with salt, pepper, and garlic powder.
3. When the pan is hot, add the oil and butter. Then sear the fish on both sides. Place it in the oven to finish cooking through. Then, top the fish with the lemon butter sauce below.
Meanwhile, for the sauce, melt 3 tablespoons of butter and add the zest and juice of 1 lemon, a pinch of salt, a pinch of pepper, and a teaspoon of drained capers. Cook the sauce together for 2-3 minutes until it’s thick and ready for the fish.
