It’s Day 2 of 31 for #JumpstartInJanuary! I love salmon. It’s versatile. It’s easy to cook. It’s hearty. It takes on flavors well. The list goes on and on. And of course, it fits within the DariusCooks.com motto – easy, simple, and delicious. Here’s the recipe!
Lemon & Brown Sugar Salmon – 276 Calories Per Serving!
2-6oz salmon fillets (408 calories)
1/2 teaspoon of salt (0 calories)
1/2 teaspoon of pepper (0 calories)
1 tablespoon of brown sugar (18 calories)
1/2 teaspoon of garlic powder (4.5 calories)
zest of 1 lemon (0 calories)
1 tablespoon of olive oil (120 calories)
Let’s Cook!
1. Preheat the oven to 400 degrees.
2. In a bowl, combine the salt, pepper, brown sugar, garlic powder, lemon zest, and olive oil until it forms a paste. Then spread over the flesh of the salmon.
3. Roast in the oven for 12-15 minutes until the salmon has cooked through. Allow to cool slightly, then enjoy.
You’ll notice in the video, I topped my salmon with an Autumn Salad. It’s just mesclun greens, apples, dried cherries, pomegranate arils, and toasted pecans. I mixed it with a homemade balsamic vinaigrette. It’s easy! It’s so easy, you don’t even need a recipe. Just grate a clove of garlic and mix it with a pinch of salt and pepper and a small spoonful of mustard. Then, add a spoonful of balsamic vinegar and mix in a few spoonfuls of good olive oil. It’s THAT simple. Then, just put the salad right over top of the cooked salmon. It couldn’t be easier!
