There are times when I love food. Annnnnnd this is totally one of them. I love Asian food. No, really, I like really love Asian food. Thai is one of my favorite cuisines. The simplicity of the techniques mixed with the freshness of flavors all does something to make me a happy camper! What I like more is that you can really create these restaurant flavors at home. They work for one or a crowd. Plus, hey, it’s keto. That’s alllllll the better, right?

For the Lettuce Wraps:
1 pound of ground chicken
1 cup of minced cabbage
1/2 cup of diced onion
1/2 cup of minced carrot
1 tablespoon of olive oil
4 cloves of garlic, minced
1 tablespoon of ginger, minced
1 tablespoon of dark soy sauce
1 tablespoon of Ponzu (or regular soy sauce)
2 tablespoons of brown sugar substitute
1 tablespoon of mirin
1/2 teaspoon of sesame oil
1 pinch of red pepper flakes
1/2 teaspoon of shallot oil (found in most Asian supermarkets)
The juice of 1 lime
To garnish, a head of lettuce
Start by heating a skillet. Then, add in the olive oil along with the cabbage, chicken, onion, and ginger. Cook over medium hat just until the chicken has cooked through. Then, add in the remaining ingredients and simmer for 10 minutes or until the sauce has reduced.
Serve by spooning the filling into lettuce leaves. Wrap and then enjoy!
