Because it’s Monday…
I mean, I don’t necessarily have a case of the Mondays. It’s just well, there are lots of things to do. When this happens, it’s usually a quick go-to dinner for me. That’s really the way I like it. And to be honest, sometimes, those are the absolute best meals EVER!
In this case, these sloppy joes are great. Plus, they cook up quick. Oh, and with the great amount of Keto-friendly breads you can order online, this makes dinner a cinch!
Let’s go!

Sweet & Spicy Sloppy Joes
1 1/2 pounds of ground beef
1 cup of onions, diced
1/2 cup of bell peppers, diced
1/2 cup of celery, diced
4 cloves of garlic, minced
1 tablespoon of olive oil
salt and pepper, to taste
2 cups of sugar-free ketchup
1 cup of brown sugar substitute
1 teaspoon of ground cumin
1/2 teaspoon of red pepper flakes
The juice of 1 lime
To start, heat a skillet on the stove.
When it’s hot add in the olive oil. Then, add in the ground beef, onions, bell pepper, and celery. Cook until the beef has just about cooked through. The, add in the remaining ingredients and cook on medium heat for an additional 5 minutes.
Serve with onion rings and keto-approved buns!
For the onion rings, I just cut onions into rings. Then, seasoned them with a sprinkle of old bay. Then, I crushed up some pork skins and using heavy cream, coated each ring in the cream first and then the pork skins. I baked them at 375 degrees for 8 minutes until they were golden brown..
