I mean, come onnnnnnn, who doesn’t love a good piece of red velvet cake? I know I do. In fact, I’m absolutely in love with he dessert! The issue with most things Keto is that you can’t have the flour and you can’t have the sugar. Well, those are the two things we love about a good piece of cake.
No worries.
I’ve come up with a recipe that I think will please the pickiest of eaters!
2 cups of finely ground almond flour
1 cup of monk fruit sweetener
1/2 cup of unsweetened cocoa powder
1 teaspoon of baking powder
1 stick of butter, softened
1 teaspoon of vanilla extract
1 teaspoon of red food coloring
2 eggs
1/2 cup of unsweetened almond milk

For the frosting
1 8-oz package of cream cheese
1 cup of monk fruit sweetener
1 teaspoon of vanilla extract
1/2 cup of cold heavy cream
To get started, preheat the oven to 350 degrees. Then, in a large bowl, mix together the almond flour, monk fruit sweetener, cocoa powder, and baking powder. Once combined really well, using a spoon, mix in the stick of butter. Then, add in the vanilla extract, food coloring, eggs, and almond milk. Mix until smooth. Then, pour into a prepared loaf pan and bake until the middle is set.
Once the cakes are baked, set them aside to cool.
To make the frosting, mix the cream cheese and sugar together until smooth. Then, add in the vanilla and heavy cream and whip until fluffy. Spread over the cooled cakes and enjoy!
