Aye – so boom, right? I was legit starving. And I was like, I want something GOOD. Like, if I’m gonna consume calories these days, they can’t be empty calories. You know what I mean? So, I was like, I need some flavor and some pizzaz. Oh, and it has to be in true DariusCooks fashion. That means we need a good 20 minute situation from start to finish. Enter shrimp! Oh, and jerk seasoning. With a little piece of cauliflower rice, too. Bam! I mean, like for real – it’s THAT GOOD!
For the rice:
1 tablespoon of olive oil
4 cloves of garlic, minced
1 tablespoon of Kosher salt
1/2 tablespoon of black pepper
2 tablespoons of butter
6 cups of cauliflower rice
4 tablespoons of fresh cilantro, chopped
The juice of 2 limes
For the shrimp:
1 tablespoon of olive oil
1 1/2 pounds of jumbo shrimp
3 cloves of garlic, minced
1 tablespoon of Jerk seasoning
1/2 teaspoon of Kosher salt
1/2 teaspoon of black pepper
1/2 cup of good tequila
1/4 cup of cream of coconut milk
Fresh chopped cilantro, to garnish
For the rice, heat a skillet over medium heat and then add in he olive oil, salt, pepper, garlic, and butter. Cook the garlic for about 60 seconds until super fragrant. Then, add int he cauliflower rice, cilantro, and lime. Cook until the cauliflower rice has cooked through. This should take about 4 minutes. Then, set aside and cook the shrimp.
For the shrimp, heat a skillet over medium heat and then add in the olive oil and garlic. Cook for about 30 seconds and then add in the shrimp. Season with Jerk seasoning, Kosher salt, black pepper and cook until he shrimp have just about cooked through. To finish, add in the tequila and set it to a flame (totally optional) and then stir in the cream of coconut milk. Garnish with fresh chopped cilantro.
