It’s a great day for lobster, isn’t it. I mean, what day isn’t a great day for lobster. Here’s a really cute and quick situation that’ll keep you in ketosis and keep the compliments rolling through.

Here’s the recipe!

For the lobster:
2 lobster tails, cut in half
2 tablespoons of Jerk seasoning
1 tablespoon of brown sugar substitute
1 tablespoon of olive oil

For the dirty rice:
4 cups of cauliflower rice
1 tablespoon of olive oil
1/4 cup of chicken stock
1/3 cup of diced bell pepper
1/3 cup of diced onion
1/3 cup of diced celery
5 cloves of garlic, minced
1/2 pound of bulk Italian sausage
1/2 teaspoon of Kosher salt
1/2 teaspoon of black pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/2 teaspoon of poultry seasoning

To garnish:
The juice of 1 lemon
Sliced Scallions

To start, heat a grill pan on the stove.

In a large bowl, combine the lobster, brown sugar substitute, jerk seasoning, and olive oil and mix well. Then, when the grill pan is hot, grill the lobster until they’re just cooked through. Garnish with a sprinkle of lemon juice and enjoy immediately.

For the rice, heat the oil in a skillet. Then, add in the Italian sausage, and cook for 2 to 3 minutes while breaking it up into small pieces. Once the sausage has cooked through a bit, then add in the remaining ingredients and continue to cook on medium high heat until the sausage has cooked through and browned a bit.

To serve, garnish with chopped scallion.
