For the grits:
3 cups of cauliflower florets, cooked until tender
1 heaping tablespoon of mascarpone cheese
salt and pepper, to taste
About 2 tablespoons of heavy cream
For the grits, add the cauliflower to a blender and then add in all the other ingredients. Blend or pulse until your desired consistency has been reached. Once the grits are chunky, add them to a pot to simmer until you’re ready to serve.
For the shrimp:
1/2 pound of jumbo shrimp
1 tablespoon of avocado oil
1/3 cup of chopped onion
1/3 cup of chopped bell pepper
1/3 cup of chopped celery
4 garlic cloves, sliced
salt and pepper, to taste
About 1 1/2 cups of beef bone broth
1/2 teaspoon of garlic powder
1 good pinch of red pepper flake
1/2 teaspoon of herbs de Provence
1/2 teaspoon of smoked paprika
1 teaspoon of fresh thyme
1/2 cup of Hennessy
1/2 cup of heavy cream
Sliced scallions, to garnish
Heat a large skillet. Once it’s hot, add in the avocado oil. Then, add in the onion, bell pepper, celery, and garlic. Saute for a few moments and then season with salt and pepper.
Add in the bone broth and season with garlic powder, red pepper flakes, herbs de Provence, smoked paprika and fresh thyme. Allow the sauce to cook together for about 2-3 minutes, stirring occasionally. Pour in the Hennessy and heavy cream and allow the sauce to cook on medium heat for 5 minutes or until it’s reduced by half and is thicker.
To serve, add the grits on the bottom. Then pour over the sauce. Lastly, garnish with scallions and enjoy immediately.
