It’s officially Taco Tuesday. Well, when you’re like me, any day can be reserved for tacos. But, this sorta gives us an opportunity to indulge. And to be quite honest, we can do so guilt-free with this recipe. Issa #GuiltFreeRecipe! Plus, you can have seconds and still stay in ketosis. Isn’t that just amazing?

Keto Chicken Enchilada Bowls
Keto Chicken Enchilada Bowls

For the chicken:
1 pound of chicken thighs
1 tablespoon of kosher salt
½ tablespoon of black pepper
3 cloves of minced garlic
½ teaspoon of cumin
½ teaspoon of coriander
½ teaspoon of onion powder
½ teaspoon of chili powder
2 tablespoons of olive oil

Preheat the oven to 400 degrees.

In a large bowl, combine all of the ingredients for the chicken. Lay on a sheet tray and then roast in the oven until the chicken is cooked through.

To garnish, start by adding cauliflower rice to the bottom of the bowl.

Then, add your favorite toppings. I added shredded cheese, diced avocado, diced red onions, sliced jalapeno, a dollop of sour cream, and a drizzle of my favorite hot sauce.
