Because it’s cold and you need a warm hug in a bowl, this situation will be perfect. It combines two of my absolute loves – beef and bacon – into a comforting bite that you’ll enjoy. Oh, and the leftovers? Amazing!!!

Keto Beef & Bacon Chili

1 pound of ground chuck

6 strips of bacon, cut into pieces

1 tablespoon of olive oil

1 cup of chopped onion

1/2 cup of diced bell pepper

1/2 cup of diced celery

2 teaspoons of garlic paste

1 heaping tablespoon of tomato paste

1 12 ounce can of diced tomatoes

1 cup of canned crushed tomato

2 cups of beef stock

2 tablespoons of chili powder

1 teaspoon of ground black pepper

2 bay leaves

1 tablespoon garlic powder

1 teaspoon of onion powder

1 teaspoon of Cajun seasoning

1 teaspoon of Kosher salt

1/4 cup of brown sugar substitute

To garnish: shredded cheese, chopped scallions, diced avocado, sliced jalapeƱo, chopped cilantro, and sour cream

Start by heating a stock pot on the stove and adding in the bacon. Let the bacon cook for 2 minutes while it renders some of its fat. Then, add in the olive oil and ground chuck. Cook the meat mixture on medium high heat for 3 to 4 minutes. Then, add in the onion, bell pepper, celery, and garlic paste. Cook for an additional 4 minutes, stirring occasionally, until the vegetables are tender and fragrant. Add in the remaining ingredients and cook uncovered on medium heat for 15 minutes.

To serve, add a portion to a bowl and garnish with your choice of ingredients and enjoy immediately.
