I did remind you that it’s the Summer, right? That means I’m going to use my grill as much as I can. I love grilling with an open flame. But, I’ve got my granddaddy’s blood flowing through me. That means I know how to set up the grill just right for the perfect smoking mechanism. You haven’t lived until you’ve smoked some pork chops.
Smoking is super easy. I use a regular Weber dome grill. But, what I do is put the coals on one side of the grill plate. Once you put the grate back on the grill – just put the food on the opposite side of the flame. This will give you good heat, good smoke, and not burn your food. So, if you happen to use sauces and rubs with sugars, you’re good to go :-)!
Herb Smoked Pork Chops
2 pounds of pork chops
1 tablespoon of each (fresh sage, fresh parsley, fresh rosemary, fresh chives, fresh cilantro, and fresh oregano)
2 tablespoons of olive oil
2 cloves of garlic
1 1/2 tablespoons of salt
1 tablespoon of black pepper
1. Put everything into a blender/food processor and pulse until you get a smooth green paste.
2. Pour the paste over the pork chops and let them sit for at least 2o minutes in the marinade.
3. Smoke the pork chops on a smoker or grill for 8-9 minutes on each side, or until an internal temperature of 155 Fahrenhei
