
One of the greatest things about this weekend is that it signals the beginning of Summer. And, after the last few months we’ve all had, aren’t we excited about new season? I know I am.
This recipe is so simple and quick that it shouldn’t even be a recipe. However, what I love is the fact that it elevates any barbecue you’ll ever have.
5 lobster tails, split down the middle
3/4 cup of good olive oil
10 cloves of garlic, minced
1 tablespoon of chopped parsley
1 tablespoon of chopped oregano
1 tablespoon of chopped basil
1/2 tablespoon of Kosher salt
1/2 tablespoon of black pepper
1 tablespoon of brown sugar
The juice of 1 lemon
The zest of 1 lemon
Preheat your grill. I used a propane tank grill for this recipe.
In a large bowl, mix tougher all of the ingredients except for the lobster tails. Make sure the brown sugar has been dissolved. Then, pour the mixture over the lobster tails and let marinate for at least an hour.
Then, grill on both sides until the lobster has just cooked through. While cooking, pour a bit of the extra marinade over the lobster so that it is infused with more flavor.
Serve immediately.
