I just think that red snapper is so groovy. It’s really one of my favorite types of fish. I love it lightly seasoned, floured, fried, with some sort of sauce to slather on it. Just recently, I had a chance to indulge on a red snapper when I was in Costa Maya. Sitting on the beach and eating that fish was one of the joys of my trip. Clearly, the fact that I sat at my kitchen counter, pulled up a chair, and devoured this recipe means that joy can linger a little longer!

Fried Red Snapper with Lime Garlic Butter
2 whole red snapper, cleaned and trimmed
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 cup of all purpose flour
oil, for frying

For the lime garlic butter
1 stick of butter
the juice and zest of 2 limes
5 cloves of garlic, sliced
1/4 teaspoon of Kosher salt

Start by preheating the oil. Then, with a sharp knife, score the fish by cutting slits in each side. Liberally season each side of the fish with the salt, pepper, garlic powder, and onion powder. Then, lightly dust in flour and shake off the excess. Fry in the hot oil on both sides until the fish is cooked through. Drain on paper towels to get rid of any excess oil.

While the fish is cooking, heat the butter in a skillet on medium heat until it browns slightly. Then, add in the lime juice, lime zest, salt, and sliced garlic. Cook 2-3 minutes on low heat and then slather over the cooked fish.

Enjoy while the fish and butter are still warm.
