There’s nothing like a REALLY great batch of fried shrimp. Here’s one that you’ll love and it’s got this really great Greek dipping sauce that’s to die for. I mean, really…nothing goes better!

Here’s the recipe:

For the dip

1 cup of Greek Yogurt
3/4 cup of sour cream
1 good pinch of salt
1 good pinch of black pepper
1 clove of garlic, grated
the zest of 1 lemon
the juice of 1 lemon
1/2 cup of good olive oil
1 teaspoon of dried chives
1 teaspoon of dried dill

Mix all of the ingredients and set aside in the fridge until you’re ready to use.

For the shrimp
1 pound of shrimp
1 teaspoon of Cajun seasoning
1 teaspoon of Old Bay
1 good pinch of black pepper
1/2 cup of Mexican crema
2 cups of corn flour
1/2 cup of corn starch
oil, for frying

Preheat the oil in a skillet. Mix the shrimp with the Cajun seasoning, Old Bay, black pepper, and Mexican crema and set aside. In a large bowl, combine the corn flour and the cornstarch. Mix with the shrimp and combine well so the shrimp are coated. Shake off the excess corn flour and fry the shrimp until they’re golden brown. Drain on paper towels and serve with the chilled dipping sauce.
