Crispy Catfish

2 catfish fillets

2 cups of all purpose flour

1 cup of cornstarch

1 cup of buttermilk

Oil, for frying

 

½ teaspoon of salt, pepper, dried Italian seasoning, ground rosemary, Old Bay seasoning, and ground fennel

 

Preheat the oil in a skillet until it’s hot. Meanwhile, In a large bowl, season the fish with the salt, pepper, dried Italian seasoning, rosemary, Old Bay, and ground fennel. Then, add in the buttermilk and mix thoroughly. In a separate bowl, combine the flour and cornstarch together. Then, dredge the catfish in the flour mixture and shake off the excess. Fry the catfish fillets on both sides until golden brown. Drain on paper towels to get rid of the excess oil.

 

Watermelon Salad

About ¼ pound of fresh watermelon, sliced

1 cup of thinly sliced red onion

½ tomato, thinly wedged

½ cup of crumbled feta cheese

A good pinch of salt, pepper, and sugar

A good drizzle of white balsamic vinegar glaze

A good drizzle of olive oil

A handful of arugula leaves

 

Really, you just want to arrange the salad on a serving sheet. Then, sprinkle with salt, pepper, and sugar. Lastly, drizzle with olive oil and white balsamic vinegar glaze.
