It’s probably the easiest fried rice you’ll ever make!
2 cups of smoked turkey, chopped (I used turkey tails)
4 cups of day-old cooked rice
1 1/2 cups of shredded collard greens (use fresh)
1/2 cup of diced onion
5 cloves of garlic, minced
2 tablespoons of vegetable oil
1 egg (optional)
1/3 cup of store-bought teriyaki sauce
1 teaspoon of sesame oil
1 1/2 teaspoons of rice wine vinegar
2 heaping teaspoons of brown sugar
frozen peas and carrots (optional)
In a large skillet, head the oil. Once it’s hot, saute the onion and garlic for a few minutes until fragrant. Then, add in the remaining ingredients except the peas and carrots. Once the rice is toasted and heated through, finish by adding in the frozen peas and carrots. Garnish with chopped scallions and sesame seeds.
