This is probably one of my most popular recipes from my cookbook, Stories from My Grandmother’s Kitchen! It’s sooooo good. And it’s easy a heck. Dinner on the table in LITERALLY 10 minutes!
For the burger
-1 pound of ground chorizo
-1 teaspoon of minced garlic
-1 tablespoon of minced onion
-1/2 teaspoon of black pepper
-2 tablespoons of olive oil
For the shrimp
-12 jumbo shrimp, cleaned & deveined
-1 teaspoon of Old Bay seasoning
-1/2 teaspoon of Kosher salt
-2 tablespoons of olive oil
For the chipotle mayo
-1 cup of good mayo
-1 chipotle pepper in adobo
-1 tablespoon of adobo sauce
-1 teaspoon of sugar
-1 pinch of salt
-3 Brioche buns, toasted
-cilantro, to garnish

1. In a large bowl, mix together the chorizo, minced garlic, minced onion, and black pepper. Form into 3 patties. Meanwhile, heat a skillet and then add the olive oil.
2. Cook the burgers on both sides until they’ve cooked through. Meanwhile, season the shrimp with the Old Bay seasoning, Kosher salt, and olive oil.
3. Remove the burgers and let them rest. In the same skillet, sauté the shrimp until they’re just done.
4. To make the chipotle mayo, mince the chipotle pepper. To make it less spicy, remove the seeds before mincing. Then, mix together with the mayo, adobo, sugar, and salt. Refrigerate until you’re ready to use.
5. To assemble the burgers, spread the chipotle mayo on both pieces of the toasted bun. Then layer the chorizo patty, cilantro, and sautéed shrimp.
