So, I love using a rotisserie chicken to create recipes. They’re super easy to incorporate in dishes and they are a super buy at the grocery store. Over the next 5 days, I’ll be sharing 5 great recipes using rotisserie chicken. It’s my Rotisserie Chicken Series!

 

Chicken & Spinach Flatbreads

2 pre-baked flatbread crusts

1 1/2 cups of chopped rotisserie chicken

4 tablespoons of good pasta or marinara sauce

2 cups of frozen spinach, drained

2 cups of mozzarella cheese

dried Italian herbs, for garnish

 

1. Preheat the oven to 425 degrees

2. Spread 2 tablespoons of pasta sauce on each flatbread. Top with 3/4 cup of chopped chicken, 1 cup of spinach, and 1 cup of mozzarella cheese.

3. Bake in the oven for 10-12 minutes or until the cheese has melted. Garnish with a sprinkle of dried Italian herbs.
