Need a quick weeknight dinner? This almost one-pot meal will have you coming back for seconds! Oh, and listen. I use a store-bought scampi sauce for the garlic bread situation. It’s literally perfect!

Cheesy Baked Ziti

2 teaspoons of olive oil

1/2 cup of onion, diced

1/2 cup of bell pepper, diced

1/2 cup of celery, diced

1 pound of hot Italian sausage

1/2 cup of diced tomato

1 teaspoon of black pepper

1 teaspoon of garlic powder

1/2 teaspoon of onion powder

1 jar of your favorite store-bought pasta sauce 

2 teaspoons of sugar

1 cup of cubed Colby jack cheese

1 cup of cubed mozzarella cheese 

1 cup of ricotta cheese

2 cups of shredded mozzarella

1 pound of ziti, cooked & drained

Shredded mozzarella cheese, to top

Chopped parsley, to garnish

Start by preheating a skillet. Then, add in the olive oil and sauce the onion, bell pepper, and celery along with the Italian sausage, until the sausage has cooked through. Then, add in the diced tomato and season with pepper, garlic, onion powder, sugar, and add in the jar of pasta sauce. Stir to combine.

Then, add the sauce to a pot with the drained pasta and the Colby jar, mozzarellas, and ricotta cheeses. Pour into a casserole dish and top with the remaining cheese. Then, bake in the oven – 350 degrees – for 25-30 minutes or until golden brown and bubbly.

For the garlic toast, I just spread a store-bought scampi sauce over a baguette and toasted it until it was golden brown.

Garnish with fresh chopped parsley and enjoy while warm.
