
2 catfish fillets, cut int half
1 teaspoon of Old Bay
1 good pinch of garlic powder
1 good pinch of onion powder
1 good pinch of smoked paprika
1 good pinch of Kosher salt
About 1 cup of buttermilk
About 1 1/2 cups of cornmeal mixed with flour
oil, for frying
For the Old Bay Mayo
1 cup of mayo
1 teaspoon of Old Bay
1 tablespoon of lemon juice
Buttered buns, to garnish
pickles, to garnish
For the fish, preheat the oil
Meanwhile, season the fish with Old Bay, garlic powder, onion powder, smoked paprika, and kosher salt. After sitting for a bit, add int he buttermilk and cornmeal/flour mixture. Dredge the fish well and shake off the excess. Fry the fish in the hot oil until golden brown. Then, drain on paper towels.
For the mayo, combine all of the ingredients together until well-combined and chill until you’re ready to use.
To assemble, add some of the mayo to the bun, then top with fish and extra pickles. Enjoy while warm.
