Bacon & Brown Sugar Salmon

There’s something about a good piece of salmon that’s cooked JUST right that makes me happy. Now, can we honestly have too many salmon recipes? Right, I didn’t think so either.

Bacon & Brown Sugar Crusted Salmon

1 ½ pounds of fresh salmon fillets

1 teaspoon of Kosher salt

1 teaspoon of black pepper

½ teaspoon of garlic powder

2 teaspoons of brown sugar

1 tablespoon of olive oil

For the topping

About 6 strips of bacon

1 clove of garlic

About 1 ½ teaspoons of olive oil

**you’ll notice in the video I added more seasonings to the salmon because that’s what I was feeling that day. You can add whatever you’d like.

Start by preheating the oven to 400 degrees. Then, add the bacon to the oven and cook it for about 5-6 minutes. It should be just about cooked through, but not all the way. Remove it from the oven and drain off any excess oil.

Then, make the seasoning for the the salmon. Add the salt, pepper, garlic powder, and brown sugar to a bowl. Drizzle in the olive oil until it makes a paste. Then, liberally rub the paste over the fish. Arrange in an oven safe dish and set aside.

To make the topping, add the par-cooked bacon and garlic to a food processor. Then, blitz it until it’s just about a paste consistency. Use the olive oil if you need a bit more moisture. Spread the mixture over the marinated pieces of salmon and roast in the oven for 5-6 minutes or until the fish has cooked through.

Serve while warm.
