Southern Fried Pork Chop Piccata
Every once in a while, I like to take a few of my favorite flavors and combine them. The pungent flavor of lemon and garlic along with the brininess of capers make the sauce super perfect. Plus, I mean, who doesn’t enjoy a delicious southern fried pork chop?
1 good pinch of salt and pepper
1 good pinch of garlic powder
All purpose flour, for dredging
A few cups of peanut oil, for frying
1.. Start by preheating the oil to about 360 degrees, for frying.
2. Then, in a large bowl – season the chops with salt, pepper, and garlic powder. Then, dredge in the flour and fry until golden brown. Drain the excess oil on paper towels.
3. Pour the sauce over the chops while they’re still warm. For the sauce, just melt a 2 tablespoons of butter with 2 cloves of minced garlic, the zest and juice of half a lemon, along with a spoonful or two of capers. I add a pinch of salt and pepper to the sauce to make sure it’s really seasoned. That’s it. Simple, right?
