Because who can’t use a good salmon croquette like Grandma used to make! I love these. They’re sooooooo good and take me right back to Sunday mornings!

Salmon Croquettes

4 cups of diced fresh salmon (canned works, too)
½ cup onion, minced
4 cloves of garlic minced
½ cup of bell pepper, minced
1 teaspoon of salt
½ teaspoon of black pepper
½ cup of almond flour
About ½ cup of mayonnaise
½ teaspoon of Old Bay seasoning
3 tablespoons of olive oil

In a large bowl, add in the salmon, onion, garlic, bell pepper, salt, pepper, Old Bay, almond flour, and mayonnaise. Mix thoroughly. Then, form into 4 equal sized patties and let rest for 20 minutes.

When you’re ready to cook the croquettes, heat a skillet on medium high heat. Add in the oil. Cook the croquettes on both sides until golden brown.
