I know it’s just Monday. However, in preparation for Taco Tuesday, keto will not be left out. In fact, there are tons of really great zero-carb tortillas on the market. Or, honestly, you could just make your own. That’s what I’m not going to do – lol. If you need some inspo on which ones to buy, Amazon has a ton of decent selections.

Either way, the filling for these fajitas are so good that you’ll be ready to enjoy them any day of the week.

Sheet Pan Catfish Fajitas

For the catfish:
1 pound of catfish fillets, cut into strips
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
1 red onion, cut into strips
3 cloves of garlic, minced
½ tablespoon of dried oregano
½ tablespoon of chili powder
½ teaspoon of cumin
½ teaspoon of coriander
1 teaspoon of salt
½ teaspoon of black pepper
⅓ cup of olive oil

Low carb tortillas, warmed
Sliced avocado
Sliced radishes
Mexican crema

Preheat the oven to 400 degrees.

In a large bowl, mix together all of the ingredients for the catfish. Then, on a sheet tray lined with parchment paper, lay out the fish and vegetables. Roast in the oven for 12-15 minutes or until the fish has cooked through.

To serve, add the tortillas on a plate. Pile them high with the catfish and vegetable filling. Then, add all of the toppings of your choice and enjoy while they’re still warm.
