Inside Out Chicken Tacos
2 cups of BBQ pork rinds, crushed
1 egg, beaten
⅓ cup of heavy cream
1 cup of fine almond flour
2 chicken breast, cut into thin slices and pounded
1 cup of coconut oil, for frying
Start by adding three plates to the counter. In one plate, add the pork rinds. In the second, add the egg and cream and mix. In the last, add the almond flour.
Take each thinly sliced chicken breast and dip it into the almond flour, then the egg mixture, then the pork rinds. Set aside for about 3-4 minutes and let the coating adhere.
Meanwhile, heat the coconut oil. Then, fry each chicken breast until golden brown. Using the chicken as taco shells, fill them with your desired filling and serve.
