Enchilada Meatball Skillet

For the meatballs:
½ pound of ground pork
½ pound of ground beef
¼ cup of minced bell pepper
¼ cup of minced onion
4 cloves of garlic, minced
1 teaspoon of salt
½ teaspoon of black pepper
1 teaspoon of ground cumin
½ teaspoon of ground coriander
½ teaspoon of chili powder

For the toppings:
Sugar-free enchilada sauce
Sour cream
Shredded cheese
Diced red onion
Sliced jalapeno

Preheat the oven to 350 degrees.

In a large bowl, mix all the ingredients for the meatballs. Then, form into small meatballs and line on a sheet tray. Roast in the oven until they’re almost cooked through.

Remove from the oven and then add to a skillet. Add in the enchilada sauce and top with cheese. Place the skillet back in the oven and cook until it’s golden brown.

To garnish, add any toppings of your choice and enjoy while still warm.
