Let’s Cook: Chipotle Chicken Salad

Here’s the recipe:
4 cups of diced rotisserie chicken
6 strips of bacon, chopped
1 avocado, cubed
1 English cucumber, sliced
For the dressing.
1/2 cup of diced bell pepper
1/2 cup of diced red onion
1/2 cup of diced celery
3/4 cup of avocado mayo
1/2 cup of sour cream
1 tablespoon of adobo (from the can of chipotles in adobo)
1 tablespoon of apple cider vinegar
1 1/2 teaspoons of monk fruit sweetener
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1 teaspoon of Dijon mustard
1/4 cup of minced cilantro
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
Start, make the dressing. Add all of the ingredients to a bowl and mix well to combine. In another bowl, add in the chicken, avocado, and bacon. Add enough dressing to the chicken mixture to moisten to your liking. Mix well and serve with cucumber slices.
