Who doesn’t love salmon? It’s super versatile, hella healthy, and cooks up quickly. It’s the perfect keto vessel to make all your ketogenic dreams come true. We’ll be having lots of it for our 90 day challenge. Here’s one way that will have you smacking your lips and coming back for more.
Keto Bacon & Brown Sugar Crusted Salmon
4 7-8 ounce salmon fillets
1/2 teaspoon of Kosher salt
1/2 teaspoon of black pepper
For the crust:
About 3 tablespoons of brown sugar substitute
6 strips of bacon that have been par-cooked
2 cloves of garlic
1/4 cup of olive oil
To garnish, lemons & sliced scallions
Preheat the oven to 375 degrees.
Meanwhile, season the fish with salt and pepper and the set on a baking sheet that’s been lined with parchment paper.
Then, in a food processor, add the bacon, brown sugar substitute, garlic, and olive oil. Pulse until the mixture forms a paste. Then, spread evenly on each piece of salmon.
Roast in the oven for 10-12 minutes or until golden brown. Garnish with lemon and sliced scallions.
**For the cabbage, it’s easy. I just cut up a whole cabbage and lots of bacon and cooked it in chicken stock until the cabbage was tender. I seasoned with a bit of garlic powder, black pepper, Cajun seasoning, onion powder, and monk fruit sweetener. That’s it!
