I’m such a fan of really good homemade chicken stock. It’s so easy to make. Here’s how I do it:
1 big pot of boiling water
1 chopped onion
1 carrot
2 parsnips
3 ribs of celery
1 whole green bell pepper
5 garlic cloves
1 bunch of parsley
2 tablespoons of dried Italian herbs
2 tablespoons of salt
1 tablespoon of black pepper
4 large chicken thighs – skin on and bone-in
Just bring everything to a boil and cook for 45 minute to an hour. Then, strain out the stock and you’re ready to rock and roll!
