I mean, it’s Summer! This means more grilling. Because, WHO DOESN’T LOVE GRILLING?! I took one of my faves – a juicy rib eye steak! Then, I seasoned it up and grilled it wth a super simples pico de gallo with a surprising twist – Bacardi rum. So good. So fresh. You have to give it a go!

For the marinade:
1 tablespoon of Kosher salt
1 tablespoon of black pepper
1 tablespoon of garlic powder
1/2 tablespoon of red pepper flake
1/2 tablespoon of smoked paprika
2 tablespoons of brown sugar
1/2 cup of olive oil
2 juicy rib eye steaks
For the pineapple pico do gallo
1 medium pineapple, diced
4-6 cloves of garlic, minced
1/2 red onion, diced
1/2 jalapeno, minced
1/4 cup, fresh lime juice
1/4 cup, minced cilantro
1 teaspoon of salt
1/2 teaspoon of pepper
1 tablespoon of brown sugar
1/4 cup of olive oil
2 good teaspoons of pineapple Bacardi rum
You kinda don’t even need a recipe. That’s the beauty of this. For the marinade, just mix it all together in a bowl and smear over the rib eye steaks. Then, grill until your desired temperature is met.
For the pico, just dump everything into a bowl and then mix well to combine. Done!
