You know, for those moments when you can’t choose between a burger or a salad sandwich – just make both!

Chicken Salad Chicken Burgers

1/3 cup onion

1/3 cup bell pepper

1/3 cup celery

3 cups of shredded rotisserie chicken

About 2/3 cup of mayo

1/2 teaspoon salt 

1 good pinch of onion powder

1 good pinch of garlic powder

1 good pinch of dried ground celery seed

1 good pinch of ground fennel

1/3 cup of sugar

1/2 diced apple

1/2 cup of diced dried cherries

Combine all of the ingredients into a large bowl and set in the refrigerator to chill until you’re ready to use it.

For the chicken burger

1 pound ground chicken

1 teaspoon of Kosher salt

1/2 teaspoon of back pepper

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

1 good pinch of dried fennel

1 tablespoon of olive oil

Combine all of the ingredients together and mix well. Then, separate the mixture into three even segments and form into patties. Cook on a hot grill until the internal temperature is 165.

For the basil mayo

1/2 cup of fresh basil

1 cup of mayo

1/2 teaspoon of salt

1/2 teaspoon of pepper

Combine all of the ingredients in a food processor. Blend until smooth.

To garnish:

Toasted bun

Sliced tomato

To assemble, slather the bun with the mayo. Then, add the chicken patty, sliced tomato, and finish by adding the chicken salad on top.
