2 carrots, shredded

2 cups of sugar

2 sticks of butter, room temperature

4 eggs

1 tablespoon of vanilla

1/2 teaspoon of grated nutmeg

1/2 teaspoon of ground cinnamon

1 good pinch of Kosher salt

2 1/2 cups of all purpose flour

In a bowl, combine the carrots, sugar, and butter until smooth. Then, add int he eggs and mix. Next, add in the vanilla, nutmeg, cinnamon, and Kosher salt. Mix to combine and add in the flour. Once combined, pour the batter into a greased pan and bake at 350F for 25-27 minutes or until an inserted toothpick comes out clean.

For the glaze:

1 stick of butter

1 cup of brown sugar

1 teaspoon of vanilla extract

1/4 cup of Jack Daniels

2 heaping tablespoons of cream cheese

In a pan melt the butter. Then, mix in the brown sugar and mix until combined. Add in the remaining ingredients and mix well. Lower the heat and work the cream cheese until it melts into the sauce. Pour over the warm brownies and enjoy.
