Cajun & Brown Sugar Grilled Chicken Thighs
This is literally the easiest chicken recipe ever! Plus, with the grill, it makes it a super easy dish to make while cooking outside. Here’s the recipe:
1 pound of chicken thighs – boneless, skinless
2 tablespoons of olive oil
For the rub,
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon Kosher salt
1/2 teaspoon black pepper
1 good pinch of hot cayenne
1 good pinch of chili powder
1 good pinch of cumin
1 teaspoon of Cajun seasoning
2 teaspoons of dark brown sugar
In a bowl, mix together the chicken and the olive oil. Then, in a separate bowl, mix together all of the ingredients for the rub. Then, liberally sprinkle the rub over the chicken and let marinate for about 30 minutes.
To cook, place on a hot grill and cook on both sides until the chicken has cooked through. Garnish by using green scallions and enjoy while warm.
