You know, one pot meals are all the rage. This one is kinda one pot, but 100% amazing. It’s like Mac and cheese – but, with no Mac and ALLLLL the cheese. Let the oven do the work. 375F for 25 minutes will ensure the middle gets super crusty! It’s literally perfect.

Baked Tortellini & Cheese

2 tablespoons of butter

2 tablespoons of flour

2 cups of half and half

1 teaspoon of salt

1/2 teaspoon of black pepper

1/2 teaspoon of onion powder

1/2 teaspoon of garlic powder

2 cups of triple cheddar

1 cup of parmesan

2 cups of Italian cheese blend

1 cup of mozzarella cheese

1 1/2 pounds of tortellini (I used cheese stuffed)

2 tablespoons of butter

1 1/2 cups of Panko breadcrumbs

*about 2 cups of mixed cheese, for the topping

*chopped parsley, to garnish

In a large pot, melt the butter and whisk in the flour. Cook on medium heat for about 65 seconds, while stirring occasionally. Then, add in the half and half and season with salt, pepper, onion powder, and garlic powder. Stir together over medium heat until the sauce thickens. Then, remove from the stove. 

Preheat the oven to 375 degrees. Meanwhile, add in the all the cheeses and tortellini to the sauce and stir well to combine. Transfer to casserole dish and set aside.

Melt two tablespoons of butter and mix the melted butter with the Panko breadcrumbs. To assemble, add the mixed cheese to the top of the casserole then, top with the breadcrumb mixture. Bake in the oven for 25 minutes, or until golden brown and bubbly. Then, garnish with chopped parsley and serve while warm.
